Greek-born Giannis Apostolopoulos is a highly talented mixologist and passionate Head of Bars at the internationally renowned Amazónico, overseeing operations in London, Dubai, and beyond. Known for its distinctive Latin American concept, Amazónico combines unique serves, vibrant culinary experiences, and lush, natural décor.

Giannis’s passion for mixology stems from a deep-rooted family tradition, inspired by his father and grandfather's dedication to the craft. His journey behind the bar began early, where his natural talent quickly became evident. In 2015, he started his formal training at the 4-Star Elite City Resort, using this time to perfect his skills. By 2018, Giannis was imparting his knowledge as a Bartending Instructor at the Private Institute of Vocational Training Orizon in Kalamata, Greece. He then joined Ling Ling, a prestigious Hakkasan Group restaurant in Mykonos, as Head Bartender in 2019. Giannis’s growing reputation led him to Dubai, where he oversaw the opening of Nammos at the Four Seasons Jumeirah Resort. His expertise earned him the role of Head of Bars at Amazónico Dubai in 2020. Beyond his role at Amazónico, Giannis has collaborated with global leaders in mixology, including a 2021 pop-up at Rome’s celebrated "The Court" cocktail bar, directed by Matteo Zed, and guest shifts with Diego Ferrari, Matusalem, and 50 Best Bars. Under his leadership, Amazónico Dubai garnered important accolades, including The Caterer’s Bar Team of the Year Award in 2022, recognition as a ‘Destination Bar’ on the 50 Best Bars List for both 2022 and 2023, and presence on the Tales of the Cocktails International Restaurant Bar List for 2022-2023. In 2023, Giannis took on responsibilities as Head of Bars for London and Dubai, spearheading the successful launch of OCTO, a dedicated cocktail lounge and late-night bar at Amazónico London. In 2024, Giannis continued to expand Amazónico’s legacy with the launch of Amazónico Dubai’s Paraíso and a new opening on the famous Place du Casino in Monte-Carlo, equipped with 2 bars and an exclusive club, this opening earned a glowing spotlight in Bar Magazine. In 2025 Amazónico will be travelling to Miami where Giannis will be overseeing the much-anticipated launch. 

Giannis remains a driving force behind Amazónico's bar program, crafting unique flavour combinations and curating exceptional drinking experiences. His dedication to innovation ensures that Amazónico’s bars remain at the forefront of the international cocktail scene.
